Doña Mercedes assures that this business already has three generations and more than 65 years of existence, because it started with her Grandma Adilia and she hopes to pass it on to a fourth generation, to her children, although she sees it as difficult, because they are all professionals, but one or two of her daughters-in-law who currently work with her could take charge of the baking things.

With this business, Mrs. Mercedes trained her children as professionals, one of whom is a doctor, and her mother also raised her and all her siblings as good people.
Doña Mercedes points out that among the different baked goods that she and her staff make are the well-known perrerreques, rice bread, quesadillas, milk soup and empanadas, all of exquisite quality that combined with a hot coffee taste heavenly.
Doña Mercedes says that the fame of her baked goods in León took her to other departments of the country, including Managua, where she has a good clientele.
Currently, she has seven employees who work full-time from Monday to Friday until 05:00 p.m. and she makes sure that the quality of the baked goods is the same as always.

Environmental commitment
She takes care of the environment as a way to preserve the planet, which is why she uses butane gas to bake her delicious oven-baked goodies. This helps her reduce the investment costs of her business, because the energy bill is lower than if she used commercial electricity.

The raw materials for making the baked goods include corn, cheese and sugar. According to Mrs. Mercedes, the establishment has a mill and three large refrigerators where the cheese is kept, as well as the ovens and trays where the product is placed for its final preparation.
